Week night stir fry

Yes, you are correct I did not post anything this weekend. Why, you well may ask did I not?  Well the answer is really quite simple, I did not cook anything.  I know that is unexpected by many, some will understand, but simply I did not cook.  Tonight, however, upon arriving at my house and needing sustenance I opted to make something quick and easy. Stir fry. Some of you are already shaking your heads at me but consider the fact that stir fry is basically veggies and noodles with an occasional protein. Quick, easy, two pots and filling.

For a quick stir fry you can use any veggies you have on hand. I used cabbage, from a different recipe planned for later this week, onions, also for a different meal, cauliflower, and jalapeno. In my freezer it is easy to find a few frozen veggies with cauliflower and jalapeno being in the mix so it was a quick and easy choice.  Thin sliced everything was added to the cast iron skillet with some sesame oil. Then, to the side of the vegetables, I added one garlic sausage with the casing removed. While the veg was starting to fry I cooked up a package of ramen noodles on the other burner without using the seasoning packet.  These two burners will cook in about equal time so keep an eye on everything so you don’t end up burnt. As the sausage began to brown I mixed everything together and added one glug of chardonnay to de-glaze the pan and add some extra flavor to the dish. I seasoned with some Korean red pepper, a little salt, a little pepper, then mixed it all and let fry until the cabbage began to wilt.  At this time my noodles were done so those were tossed in the mix also. Some soy sauce was added to make sure nothing was sticking and to add flavor. In just a few minutes it was finished and dinner was served.

As in all things we should learn from our experiences and tonight, although I knew better, what I learned was not to season the veggies with salt.  The sausage has salt, the soy sauce has salt, and unless sodium is your favorite side dish that is more than enough.  It still turned out okay and some of you may even prefer a more salted dish but personally it was a bit much.

As I mentioned, using what you have on hand is important for this meal and any budget friendly meal really.  Most of us have some type of vegetable, a protein, and a package of ramen around.  If you have it, fresh ginger, sliced carrots, and mushrooms would have been good in this dish. If not, really most veggies will work.  For me, this dish needed more spice so an additional pepper or even a chili sauce would have been a great addition.

Just a saucy tip for you as well, make actual stir fry sauce if you can.  Cornstarch, soy sauce, and sesame oil is all it takes. This type of sauce will be a little gooey so it adheres more to the ingredients than using soy sauce alone.

1\4 thin sliced onion
1 cup frozen cauliflower
1 diced jalepeno
1 garlic sausage
2 pinches biden red pepper
2 tablespoons sesame oil
1 glug chardonnay
1 package ramen noodles
Soy sauce
Salt and pepper
