Recently, I had the opportunity to have a southwestern burger at a local restaurant. Not too bad, green chilies, and just tasty goodness. However, part way through the burger I decided I could do equally as well or better at home. So today, I decided to give it a shot. Instead of a boring sandwich lunch became a cheeseburger adventure.
A quick trip to the store resulted in everything I needed for today’s meal. Onion, pepper, tomato, bread, and of course ground beef. To start with I took 2 pounds of ground beef and liberally seasoned it with Lonestar brisket seasoning, a slightly smoky blend of salt, pepper, paprika, and spices. This fixed what was the only part of the southwestern burger that I did not enjoy, poorly seasoned beef. I let the beef sit while chopping half an onion and slicing up a poblano pepper. The onion and some oil went onto a hot grill with the pepper slices off to the side. After the onion was cooked most of the way through I added a half pound beef patty right on top. This allowed the seared onion to integrate itself with the meat. Once the onions, beef and peppers were completely cooked. I slapped a slice of Havarti cheese on the burger and placed the creation on a savory herb ciabatta bun, added ketchup, mustard, tomato, and I had a burger.
The end result was super tasty, more so than what I had at the restaurant. The brisket seasoning added a nice flavor to the meat, the roasted peppers were not spicy but added plenty of flavor to the meal, and the crispy onions were the perfect companion to the peppers. Definitely a win for a weekend lunch.
