Stuff in a pot

It is Friday night and everyone is probably sitting down at the table now or wondering what they should eat. I have the same problem. Exhausted, but having had a good day I returned home and decided to cook the food I had planned for earlier but did not really feel like cooking or eating.  

As my kids were growing daughter the third had a meal she liked which we named stuff in a pot. It is a relatively simple  one pot meal that changes a little each time based on what I had available. Tonight I made a variation on this for everyone to enjoy.

This is typically a meal we cooked in a Dutch oven but to as I needed a lower quantity and wanted to occupy less time I utilized a normal stove top pot instead. This was approximately a 3 quart vessel but can change depending on the size of meal you are cooking. As with most of my recipes simply cut back the ingredients or add more depending on the size of the group you are feeding. Most of them do not require super precise measurements so just jump in and go for it.

In this case, into the pot I tossed garlic sausage, andouille sausage, bratwurst and a little oil.  These sausages were sliced in to bite sized portions and browned in the oil. To the protein was added onion, garlic, bell peppers, jalapenos, cabbage, small red potatoes, sauerkraut, and one sliced apple. This was all mixed together then one cup chardonnay was added, followed by apple cider vinegar, and chicken broth. You are not making a soup here so be careful with how much liquid is used.  Do not cut back on the chardonnay or the vinegar unless you are making a smaller meal as they are needed for the flavor of the dish. Season with black pepper and let cook until the potatoes are fork tender.

It is an easy meal to let simmer on medium low, covered in a pot, while you mow the lawn or go for a walk in the rain.  The hardest part is slicing all the bits and pieces that go in the pot.  After that everything is done except for the waiting and eating. In my case, it was a walk in the rain :)  

Simple? Yes. Filling? Yes. Flavorful? Yes.  It is hard to beat a meal that only uses one pot, tastes good and feeds as many people, or as few, as you need to.

Ingredients:
2 garlic sausages without casings
2 andouille sausages sliced
2 bratwurst sliced
1\2 yellow onion chopped
1 cup cabbage sliced or chopped
12 small red potatoes
2 sliced jalapenos
1 peeled and sliced apple
4 sliced small bell peppers (jalapeno sized)
1\2 cup sauerkraut
1 cup chardonnay
1 cup chicken broth
1\4 cup apple cider vinegar
