Just pizza??

Some nights are full of real food, beef burgundy for example, some are not. Tonight was definately not a gourmet night.  As I was originally planning on cleaning a garage before the storm system blew in I had planed on a simple, cheap, frozen pizza. Totino's anyone? 

I went home in the middle of the wind storm and settled in to eat my supper  but as you may have guessed, I just can't let the pizza be just pizza. Before I start I should mention I am poor and you should not be judging me by my choice of available toppings. : )

 I pulled two blank canvases out of the wrappers, placed them on the aluminum foil backing and began to paint. The first became a perfectly pickled pizza featuring freshly pickled jalapenos and beans, recipe forthcoming, as well as peperoni. The second pizza became something different with a series of light toppings from the pantry. First, on top of the cheese came a layer of delicately sliced red onion. That was followed by a sprinkling of freshly frozen corn and topped with chopped asparagus spears.  The pizzas were then placed in a 425 degree oven for 15 minutes.  The result was amazing!  The taste of the jalapenos and beans combined with the peperoni was a great experience. Crunchy, crispy peppers with the meaty goodness of peperoni on a three cheese pizza is hard to beat.  Except, that is, by the second pizza.  The flavor combination of the onions, corn, and asparagus married very well. It was a flavorful treat to end the day and the tastier of the two pizzas.
 
Look, it does not matter who you are or what you have on hand dinner can always be better than anticipated. Step outside of your comfort zone and try something new, something unexpected. You may just surprise yourself.
