Hello friends!
Has your week been as interesting as mine? If it has, then it is a fair bet that you have not been eating enough. By the time today was over my body was crying out for the sustenance it had not been receiving so, upon arriving at the house a little earlier than anticipated, I got settled in and inspired by Jimmy Buffett grabbed the ground beef and went to work.
While Jimmy's cheeseburger in paradise was on a bun with an onion slice I opted for something a bit different. To begin, I diced up some onion and jalapeno then dropped them in a small mixing bowl. To this I added my ground beef, once again courtesy of our local W Lazy 5 Cattle Co, meshed it all together, and sprinkled my dinner with some Grandpa Lynn's all purpose seasoning. After warming up my cast iron skillet I added a little oil and placed my burger in the pan at medium heat. As the beef sizzled away on side of the skillet I started frying up some potatoes O'Brien on the other. To the peppers and diced potatoes I added a little more of the all purpose seasoning and cooked until heated through and crispy.
In only a few minutes everything finished cooking and I transferred the potatoes to my plate, plucked the burger from the pan, and placed it on the nest of potatoes. Jimmy ate his with Heinz 57 but I opted to top min with a liberal dose of the red sauce I prepared for the tacos and a little shredded extra sharp cheese. The red sauce added a nice flavorful kick and as it dripped of the burger moistening the nest of potatoes it rounded out the meal nicely.
This was exactly what my body needed tonight, and the tasty burger was far better than anything most of us can pick up locally.

1 tablespoon diced fresh pickled jalapeno
1\3 pound ground beef
1 cup frozen potatoes o'brien
1\4 cup red sauce
Grandpa Lynn's Seasoning
