Having recently thawed out a package of ground beef you can guess what the main ingredient is for about three meals. When cooking for one, a little bit goes a long ways. It has been a challenge to learn how to cook a smaller meal but at least I get leftovers :)
Here is my take on an easy, classic, lunchroom casserole, Frito pie. This easy dish was scaled down for me, but you can easily add extra ingredients and feed a family. Starting off, I opted to use kidney beans instead of black beans. The size, texture, and taste all fit this dish a little better than the small black beans I have in the pantry. In the pot went the beans along with diced jalapeno, corn, garlic, onion, salt and pepper. This was simmered on medium low until the beans were tender and the liquid reduced. While that was bubbling away, my cast iron skillet made quick work of the seasoned ground beef. After the liquid has reduced in the pot the ground beef is added and everything is mixed together. This savory mixture went in to a small casserole dish about 8x8 in size. Knowing that this mixture had very little liquid, I added the remaining red sauce from the tacos, mixed, then topped with Fritos and shredded cheese. Having already warmed up the oven to 350 my casserole went straight inside where it sat until the cheese was melted.
This proved to be one of my favorite variations on this dish. The peppers and the red sauce added just enough heat to tingle my tongue and the crunchy corn chips gave the dish wonderful texture. This dish can be made with almost anything you have around the house from canned chili to simply beef and beans which is great as you have a meal that does not cost anything extra. When budgets are tight, that is always important.

1-2 diced jalapenos (I used 1.5)
1 tablespoon garlic
1\4 of an onion diced
1 small can of corn
1\3 pound ground beef
3\4 cup red sauce
1 small bag fritos
1\4 cup shredded extra sharp cheddar
salt and pepper
