Easy weeknight sandwich

Thanks for stopping by, if you are like me you may be here hunting quick and tasty dinner ideas. Tired of pizza, mac and cheese, and soup from a can?  Don't worry, so am I. Tonight we are making a classic BLT with a twist.

A BLT is a tasty classic sandwich, quick and easy to make yet packed with veggies and protein. Keep in mind I did not say it was super healthy with the greasy bacon but it is always delicious. Tonight I started by dropping some bacon into the hot cast iron skillet. This cooked until it reached that perfect middle ground between crunchy and soft. Then, I toasted two slices of deli rye bread in the skillet with the hot bacon grease. After the first side was beginning to crisp, I flipped the bread and to one slice I added a garlic serrano pepper paste. This is one of my favorite go to homemade seasonings. It does not matter if you are making grilled cheese, hamburgers, or a BLT it adds a little spice and lot of flavor to the dish.

Pulling the toasted bread from the pan it went directly to the plate where the slice without the peppers received a little mustard, and the sandwich fillings. This was topped with a slice of sharp cheddar cheese and the bread with the peppers. Overall, a tasty way to end the day.

Ingredients:

3 slices bacon
2 leaves of romaine lettuce
2 slices of tomato
1\2 finely diced serranno pepper
1-2 cloves of finely minced garlic
mustard to taste

For the paste place the pepper and garlic in a small bowl. Using a spoon crush and mix them together until a mostly smooth, spreadable, paste is formed. Ideally you would use a mortar and pestle, but considering most of us don't have one spoons and bowls work just fine.
