Meal prepping

Being one of those people who is short on cash and has to drive to work every day means that I don't always make the best food choices. Do you have the same problem? Or maybe you just don't want to cook or feeling like eating. That happens to me, life just sometimes gets in the way of healthy eating.  I have found that on those days that I have the desire and time to cook prepping for several days at a time helps keep me healthy.  I have heard a lot of excuses from a lot of people about why they don't plan ahead but if we are being honest, can't we all dedicate some time to preparing food?  Either we cook extra and package the leftovers so that they are ready to grab from the fridge or we can prep several meals at a time that are placed in the fridge or freezer but are ready to go at a moments notice.

Recently I made a ragu style sauce that, when combined with pasta, provided lunchtime leftovers for most of a week.  In addition to feeding me now, I made enough sauce to freeze and use later as an easy meal.  This can be reheated and placed over noodles, rice, bread, or used as the base for a soup if you are feeling ambitious and creative.  Below are a few of my go to items that can be prepared before hand for easy meals on busy days.  If you would like recipes to go with any of this just drop me a comment and I can help with that.
