Leftovers made easy


Hi there !

Last night I arrived at my little house with the intention of using some leftovers to create something delicious for supper. I started with 1/4 of a red onion in a skillet, added 3 chopped slices of bacon and turned to the fridge for the last little bit of the beef burgundy. I knew it was at the end of its lifespan and not wanting to waste anything I was hopeful that it was still edible. Nope. To the trash it went. Such an apt metaphor for life sometimes, right? Sometimes we just have to adapt our plans and move forward. Already having the sizzling items in the skillet, I added frozen potatoes O’Brien, pickled jalapeños and beans, seasoned with a little salt and pepper, and I had supper. Nothing fancy but when placed on a tortilla with a little cheese it makes a good, cheap, burrito, using ingredients I already had on hand and at that price point it can’t be beat :)

If you feel like doing something a little different, add the jalapeño bourbon glaze from the burger post (I did). It will add a lot of flavor to the dish and the sauce is a welcome addition to meal.

1/4 red onion diced
3 slices bacon chopped
2 cups potatoes O’Brien 
Shredded cheese
Bourbon glaze
