This Thanksgiving I found myself in the kitchen with a little extra time and decided that I needed to find a new addition to our breakfast line-up. After spending some time trolling the internet I settled on the idea that muffins would be perfect. They are easy to make, quick to eat and on a rushed school day morning a good muffin can help you or the kids make it through the first part of the day. The hard part is that muffins, like most breakfast items, contain ingredients that I cannot eat. Specifically, eggs and milk are no longer a part of my diet. This is not as big a deal as some people think, especially while baking. Applesauce is the easiest, and healthiest, egg and oil replacement out there. To replace one egg use 1/4 cup of applesauce and as an oil replacement you can use a one to one ratio replacing 1/3 cup oil with 1/3 cup applesauce for example. This recipe therefore contains no egg, no oil, and a minimal amount of vanilla soy milk to make a quick and easy breakfast.
First combine the following dry ingredients in a medium sized bowl.
2 cups flour
2 tsp baking powder
1\4 tsp salt
In a separate larger bowl cream together 1/2 cup butter and 2/3 cup sugar. When this is completely smooth add 2/3 cup applesauce and the zest of an orange. Add to this mixture your dry ingredients along with 3/4 cup vanilla soy milk. You can use less soy milk if you prefer a muffin which is slightly more dense. After all of these ingredients are combined add approximately 1 cup of craisins. The amount of craisins can be altered of course or even replaced by raisins or nuts as you prefer. Spoon the batter into a muffin tin lined with baking cups and sprinkle brown sugar on top. Place in the oven at 350 degrees for about 20 minutes or until the tops of the muffins are a light brown color.
The result is a healthy orange, craisin muffin that everyone in the family is sure to love!
