In our house we have many comfort foods. One of them is chili. We make many types of chili using whatever meat we have available; tonight I am making a chicken chili and biscuits. This is a very versatile meal that can be adapted many ways and is one my family enjoys.
For this chili I cooked 4 chicken legs with 5 cups water and 4 bullion cubs. This created a great base for the meal. The meat I shredded after the legs were completely cooked. To this base I added:
1 can cannellini beans
1 can black beans
1 can corn
1/2 chopped red bell pepper
1 chopped fresh tomato
1/4 to 1/2 can tomatoes with green chilies
1/2 tsp ground cumin
1/2 tsp Italian seasoning
1/2 tsp garlic powder
2 bay leaves
You can always substitute about 1 pound of chopped chicken breast if you do not buy whole chickens. If you do this make sure you still create a base of about 5 cups chicken broth. I did not drain any liquid from the canned ingredients, this helped maintain the proper level of liquid in the chili without adding extra water.
As an after dinner note all my kids really liked the chili tonight and we have plenty of leftovers.
These biscuits were an easy adaptation of a recipe I leaned as a missionary in Portugal. It is NOT a Portuguese recipe, it was another missionary who gave me the idea for the biscuit and my family that helped it evolve into what it is now.
Secret Of Life Biscuits
In a large mixing bowl combine
4 cups flour
5 tsp baking powder
1 1/2 tsp salt
2 tablespoons italian seasoning
1/4 tsp pepper
1/2 tsp garlic powder
After mixing the dry ingredients well add
1 medium onion (finely chopped)
1/2 cup shredded cheese
2 cups milk
Mix until moist and thick, bake at 375 until golden brown.
These biscuits are great plain, with soup or chili, or with biscuits and gravy. They are one of my kids favorites, and my 7 year old girl was able to make these tonight with very little help!
