Tonight, because of girl scouts, we needed a easier supper. The french bread pizza hit the spot! It was easy and kept the kids happy, I mean after all who does not like pizza. This evening my wife, who is also the girl scout leader, let me know that for next week I need to prepare a meal from the African islands I lived on. Cape Verde is a small island chain off the coast of Western Africa. It is, by American and European standards, very poor. I have decided to make a version of one of their most common dishes, cachupa. This is a dish based off of a dried, white corn such as hominy. Traditionally they use a large mortar and pestal to remove the tough outer skin before cooking the corn until it explodes. We will see how this goes. . .
